I
am so excited about this wine! It tastes like summer in a glass. But I
think what I love most is how beautiful it looks from the freshly
picked flowers from the garden. This really isn't a recipe. It's more
just a process and an idea starter. You can take it anywhere your inner
garden spirit moves you to. Mine was very excited to use some of my
abundant nasturtiums, lavender, calendula, and some thyme that had
started to blossom. I have made this with both pinot gris, and
chardonnay. Both were delicious, but I liked the chardonnay the best
with the flowers that I used this summer. The Nasturtiums have a
surprising herbal peppery flavor, and pared with the other three flowers
that I chose, needed a full bodied white wine to stand up to them. I
think the pinot gris would have been really delicious with the softer
flavors of rose, chamomile, and maybe some pansies. Oh! What about
using lilacs and elderflowers in the spring, in something like an
albarino? So many beautiful combinations, just waiting to be gathered
into a nice bottle of wine.
Note: I seeped this wine in the fridge for 3-4 days before serving. Also great as a wine spritzer. Just add seltzer. Enjoy :)

Flower Wine
5 sprigs of flowers (edible, of course!)
1 bottle of white wine (I like a twist off cap for this, just makes it easier)
